Saucy Chicken Lo Mein
- 8 oz. cooked 100% whole wheat linguini
- Sesame seed oil
- 2-3 cups frozen Asian vegetables
- 1 cup shredded cooked chicken
- 1/3 cup soy sauce (I did not use clean soy sauce; at this point, I don't even know if it exists. We are still cleaning out the pantry!)
- 2 tbsp sake (rice wine)
- 1 1/2 tsp sesame seed oil
- 1 tbsp cornstarch
- 1/2 tsp honey
- 1/4 tsp ground pepper
In a large pan, add the vegetables and sesame oil (according to taste) and heat on medium.
While pasta and vegetables are cooking, prepare the sauce, stirring with a whisk.
Once vegetables are heated up, add chicken and stir together until heated thoroughly. Stir in sauce and pasta, and cook for 4-5 minutes until pasta is coated. Be sure to stir well.
Serves 4 if in 2 cup servings - more if you reduce the serving size!
Cabbage Soup
- 1 cup red onion, diced
- 4 carrots, diced
- 4 ribs celery, diced
- 3/4 head of cabbage, sliced into one inch chunks (I used red because that's what I had on hand)
- 6 cloves minced garlic
- 4 cups vegetable broth
- 2 cups water
- 2 tbsp olive oil
- 1 tbsp basil
- 1 tbsp oregano
- salt and pepper to taste
In a large pot, heat the 2 tbsp of olive oil and add 1 cup of diced onion and the minced garlic. After 1-2 minutes, add the celery and carrots for an additional 3-4 minutes. Then add the vegetable broth and water; bring to a boil. While you are waiting for it to boil, chop up the cabbage into bite sized pieces. Add the cabbage and the remaining ingredients. Return to a boil, reduce the heat and simmer for 3040 minutes, or until the cabbage is tender. Enjoy alone or add cooked quinoa or shredded chicken!
Sweet Potato and Black Bean Chili
- 6 large sweet potatoes, peeled and cut into 1/2-inch cubes
- 1 1/2 large yellow onion, chopped
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 tablespoon minced garlic
- 1 tablespoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can Lentil soup (can substitute another can of black beans)
- ~ 6 chopped tomatoes (should be equal to about 28 ounces)
- 1/2 cup brewed coffee
- 4 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
In a slow cooker, combine all ingredients and cook on low for 8-10 hours.
